Fanesca is a soup traditionally eaten during Holy Week in Ecuador. Its base is pumpkin and figleaf gourd, and then salted cod and 12 types of beans and grains, to represent the 12 Apostles, are added and cooked with milk. Usually these include lentils, peas, maize and fava beans. Then it's garnished with boiled eggs, plantain, herbs and sometimes mini empanadas. Very tasty!
